For me personally Tofu is only for use in Asian type recipes, but that is just me. I know there are many on plant-based diets who think of this as a major part of their meal plans. For me the thing is there is no getting away from the fact that this is a ‘bland’ food, and for someone who adores flavour I can only love it when it is accompanied by some hard hitting other elements.

I love the photo on the website of a beautiful creamy square of artisanal organic tofu with what looks like a dollop of ginger paste, some fresh spring onions, and some rich deep quality tamari/soy sauce being poured over it. Add a tiny bit of chopped fresh chilli and give me a hot bowl of sushi type round rice and I would be a very happy bunny.

But L’Atelier Tofu has gone somewhat further here with their clever seasonal flavourings. As well as the normal ‘nature’ type tofu there is also a ‘cedar smoked’ tofu, a ‘japanese smoked wood tofu’, a ‘rosemary’ tofu, an ‘olive’ tofu, a ‘sage & citron’ tofu, a ‘spring onion pistou’ tofu, a ‘safran’ tofu, and what sounds the perfect one for me, a ‘ginger & lemon grass’ tofu.

But BEWARE, visits are rare because we’re swamped with your orders 😉 it will ONLY be by appointment and if we manage to free up some time between our moulds and cleaning (we apologise in advance if this isn’t possible on the day of your choice!).” Totally understandable, but I would love the chance to visit one day to see how this is made.
